Fruit Topped Victoria Sponge Cake

  Hello everybody!
This week's blog is another baking blog! I had an afternoon tea party this weekend (for a future post) but the main feature was a forest fruit Victoria sponge cake, since you like my baking blogs so much I thought I'd show you how to make the wonderful cake.




Makes : 10 slices  
Prep time: 15 minutes  
Cook time: About 20 minutes
Difficulty: Easy

   Ingredients:   
For the cake:
 200g caster sugar
 200g softened butter
 4 eggs, beaten
 200g self-raising flour
 1 tsp baking powder
 2 tbsp milk  

For the filling:
 100g butter, softened
 140g icing sugar, sifted
 Drop vanilla extract (optional)
 Half a 340g jar good-quality strawberry jam
 Icing sugar, to decorate
 Fresh berries, to decorate

Method:
1. Heat the oven to 190C/fan 170C/gas 5. Butter two 20cm sandwich tins and line with non-stick baking paper.
2. In a large bowl, beat all the cake ingredients together until you have a smooth, soft batter.
3. Divide the mixture between the tins, smooth the surface with a spatula or the back of a spoon, then bake for about 20 mins until golden and the cake springs back when pressed.
4. Turn onto a cooling rack and leave to cool completely.
5. To make the filling, beat the butter until smooth and creamy, then gradually beat in the icing sugar. Beat in the vanilla extract if you're using it.
6. Spread the butter cream over the bottom of one of the sponges, top it with jam and sandwich the second sponge on top.
7. Dust with a little icing sugar before serving. If you like, add various berries on top of the cake to decorate.
8. Keep in an airtight container and eat within 2 days.

Outline Edits

  Hello everybody!
This week's blog post is quite short and simple, but I hope you will enjoy! It's Outline Edits! If you don't know what 'outlines' are, they are basically photos made to resemble pencil drawings. I have used various edits to merge the outline images with different backgrounds that I think compliment the outlines! I hope you enjoy...

 This post edit was inspired by the outlines hair. She has space buns which inspired me to go with a galaxy theme...
 

This next edit has a royalty theme in a way... this is because the girl in the outline is wearing a crown...
     

This next edit is fun and yummy, and by 'yummy' I mean it looks so good you want to eat it... SPRINKLES!!
 

Next, is a floral themed edit since the outline girl has roses in her hair and it is Spring so why not...?

 And last, but not least, one of my favourites.. no explanation needed...

I was in need of a new season wardrobe and did a bit too much shopping in 3 amazing shops; H&M, Stradivarius and Primark!!! These are the type of shops you go in and can't leave without buying something (comment if you can relate). So, without further delay, here is my HUGE shopping haul...

Malteser Tiffin

  Hello everybody!  
  This weeks blog post is another baking post! As you all probably know, I love baking very much so I'm very happy to finally be doing April's bake! This bake does not require an oven so I think its easy peasy! :)   

     

Makes: 1 - 16 squares  
Prep time: 30 minutes  
Chill time: 1-2 hours   
Difficulty: Easy    

  Ingredients:
 200g milk chocolate (I used Lindt milk chocolate)
 100g unsalted butter
 2 tbsp golden syrup
 125g digestive biscuits
 135g bag of Maltesers   
  For the topping:
200g milk chocolate
 25g unsalted butter
 1 tsp golden syrup    

  Method:
1. Line a 20cm square baking tin with baking parchment. Place the 200g of chocolate, butter and syrup in a heat-proof bowl and melt over a pan of barely simmering water or in the microwave. Once almost melted, remove from the heat and gently stir until any tiny bits chocolate have melted. Allow to cool a little.
 2. Place the biscuits and 35g of the Maltesers in a freezer bag, seal and crush with a rolling pin. Or alternatively, blitz in a food processor. You want mainly crumbs but a few small chunks of biscuit is fine.
 3. Tip the crushed mixture and whole Maltesers (save 1 or 2 for yourself) into the melted chocolate and stir until everything is coated. Press into the prepared tin and make the topping.
 4. For the topping, melt the chocolate, butter and syrup as before and spread over the biscuit base.
 5. Cover the tin with cling film or foil and refrigerate for 1-2 hours before cutting into squares.

Easter Egg Hunt

  Hello everybody!
 Happy Easter!! Since it is Easter Sunday, you would probably suspect that this is going to be an Easter themed post! So, I've compiled a list of Easter eggs that I've received and taken a few "egg-hunt" inspired photographs. Hope you don't get too hungry reading this blog post!!

▪️ Cadbury  Heroes  Hollow milk chocolate egg with bag of assorted chocolates and toffees
