This week I'm doing a baking blog, I'm really happy cos I've been missing doing these and I'm sure you have too! So, this weeks baking... Is funfetti cupcakes! If you don't know what funfetti cupcakes are, they are basically vanilla cupcakes with sprinkles added into the cake mix, so when you bite into them you have flashes of colour! Here is a photo of them...
Serves: 12
Cook Time: 20- 25 minutes
Prep Time: 15 minutes
Effort: Easy
To make the cupcakes you will need:
125g caster sugar125g self raising flour
2 large free range eggs
125g unsalted butter
¼ teaspoon of bicarbonate of soda
1 ½ tablespoons of milk
¼ teaspoon of vanilla extract
As many sprinkles as you like!
To make the buttercream icing you will need:
335g icing sugar
150g unsalted butter
1- 2 tablespoons of whole milk
¼ teaspoon of vanilla extract
335g icing sugar
150g unsalted butter
1- 2 tablespoons of whole milk
¼ teaspoon of vanilla extract
Method:
Cupcakes:
1) Pre-heat the oven to 170 degrees Celsius.
2) Place your cupcake cases into a muffin/cupcake tray. (I used a muffin for better shape and doubling up on the cases makes the case colour stay vibrant after baking.)
2) Combine all the cupcake ingrediants in a mixing bowl and blend well using an electric hand mixer or kitchen aid and then add as many sprinkles as you like whilst mixing gently.
3) Spoon the mixture into the cases. (It is a lot easier with an ice cream scooper.)
4) Place in the oven for 20- 25 minutes until just turning golden brown.
5) When baked, leave to cool down completely on a wire rack before icing.
Buttercream Icing:
6) Beat the butter in a mixing bowl until soft and fluffy and more white in colour.
7) Add the sieved icing sugar one third at a time mixing slowly to avoid a sugar cloud.
8) Add the vanilla essence and milk a tablespoon at a time to get the right consistency.
9) Spoon the mixture into your piping bag (fitted with a large open star tip nozzle) and get creative!
10) Add sprinkles to complete.
