The Ultimate Rocky Road

  Hello everybody!  
  This week’s blog is a bake that actually requires no baking! It’s the ULTIMATE Rocky Road! It is a super easy and tasty tray bake. It has ALOT of chocolate, sorry one of my New Year’s resolutions broken - oops! If you want to know how to make this indulgent treat carry on reading!    

   

Makes: 16 pieces
 Prep time: 30 minutes
 Chill time: 3 hours   

  Ingredients:
 400g Dark Chocolate
 3 tbsp Golden Syrup
 100g Butter
 100g Digestive Biscuits
 150g Marshmallows or Mini Mallows
 90g Maltesers
 2 x Crunchie
 2 x Double Decker 
 2 x Rolos
 2 x Smarties
 100g White Chocolate  

  Method: 
  Start things off by breaking up the digestive biscuits, and chopping up the crunchies and double deckers. Depending on what marshmallows you choose (I chose mini ones) if you choose the big ones you’ll want to cut them up a bit, but if you opt for mini ones, obviously you wouldn’t. Put all of these and the Malteasers and Rolos in a large bowl. Now melt the chocolate in a glass bowl over simmering water. As you wait for it to melt, stirring now and then, melt the butter and the golden syrup in a small pan. Once the chocolate has melted, and the butter and syrup are combined, gradually add the butter and syrup mixture to the chocolate, stirring as you do so. In a deep rectangular baking tray lined with greaseproof paper, spread some of the chocolate over the bottom. Pour the rest of the chocolate into the bowl of biscuits, marshmallows and chocolate pieces and mix until it’s all covered. Spread evenly over in the baking tray Now melt the white chocolate and drizzle over the top. Crush the smarties and sprinkle these over to decorate and refrigerate until solid. Cut it up and tuck in!

My New Year’s Resolutions | 2018

  Hello everybody!
  Before I begin... HAPPY NEW YEAR! I hope you celebrated the New Year well. This week’s blog post is an annual theme, it’s my New Year’s resolutions! I’ll be seeing whether I’ve completed my resolutions from last year and creating some new ones.

  Last Year’s 2017 Resolutions; did I complete them?

  ▪️ Make my blog the best it can be so that I hit 7,500 views! My current views are 4,925, which I still can’t believe! Because it’s 2017 let’s try and hit this ridiculous amount by the end of the year! - I completed this! I surpassed 7,500 on June 7th which is unbelievable seeing as I set this goal for the end of the year!!

  ▪️Like I said before I’m still trying to improve my stress levels so this resolution is staying, I feel like 2017 is going to be the year! - I believe that I’ve improved this since last year, although I feel there are still ways I can improve it.

  ▪️Another resolution that is staying is getting out more, it’s definitely improving but I don’t think it’s improving to its fullest extent. Whether it’s a shopping spree at a market or a jog in the morning, it will happen! - I’m not completely sure whether I can say I successfully completed this one. Last weekend I did go for a walk down to the beach front however, there are DEFINITELY times I chose to stay indoors rather than go out...

  ▪️Create a gratitude journal - I think these are quite important because they help you think positively and get you in a good mood. I am going to follow a 30 day prompt for this, and the first day’s entry was "what smell are you grateful for today?" The smell I am grateful for is freshly baked bread. - This resolution probably lasted for less than a month. I really struggle to keep something up like this.

  ▪️Improve my makeup skills and try new looks. I received lots of makeup for Christmas so now I have to use my "makeup knowledge" and creativity to create an amazing masterpiece on my face. - I think I’ve improved my makeup skills a bit. There’s still a lot of room for improvement but I enjoy it so I’m sure it can keep on improving.

  ▪️Improve my grades and academic skills. Sometimes I can enjoy studying/working or sometimes it can seem like the most boring thing in the world but it’s still very important so I need to remember; however I feel, that I must put education first. - I feel proud to say I’ve achieved this goal. My education has always come first and I feel like 2017 showed that.

    My 2018 New Year’s Resolutions

  ▪️ Reach 16,000 views by the end of the year. I know this seems insane but I know we can do it. At the moment I’m on 11,225 so lets see whether we can reach this absolutely crazy amount by the end of the year!

   ▪️ Widen my audience on this blog by gaining more readers. A way I can do this is by sharing my blog.

   ▪️ Cut down on sugary foods because my skin isn’t great at the moment so by cutting down on sugar, my skin will clear up.

   ▪️ Be more independent, whether thats going down to a local shop on my own or making more of my own decisions which is something I’ve always wanted to change, sometimes I turn to my parents or friends and ask for their opinion when I should just choose my own.

   ▪️ Have more commitment, in my resolutions last year I said I wanted to create a gratitude journal which I did not complete. I am the kind of person who will start something with loads of enthusiasm but then forget about it or just not do it.

   ▪️ Keep up learning an instrument. I own a guitar, but with the same thing as the gratitude journal, I don’t commit. I have always loved music and had an interest in instruments, in fact, I often find myself on GarageBand playing about with the app but never get round to actually playing a real instrument really well.
