Mothers Day Scones

  Hello everybody!  
  This weeks blog is a baking post! Since it's Mother's Day I thought I'd bake some scones for my mum so we could enjoy a lovely cream tea! I hope you had a nice time celebrating Mother's Day with your mum! If you want to make your mum even happier, bake her some scones!

   

 Makes: 20-24 scones
 Prep Time: 20-30 mins
 Cook Time: 15 mins
 Difficulty: Easy-medium  

  Ingredients:
 450g (1 lb) self-raising flour
 2 rounded teaspoons baking powder
 75g (3 oz) softened butter
 50g (2 oz) caster sugar
 2 large eggs
 About 225 ml (8 fl oz) milk  

  Method:
 1. Pre-heat the oven to 220C/Fan 200C/Gas 7. Line two baking trays with parchment paper and lightly grease.
 2. Measure the flour and baking powder into a large bowl. Add the softened butter and rub it in your fingertips until the mixture resembles fine breadcrumbs. Stir in the sugar.
 3. Beat the eggs together and make up to a generous 300ml (1/2 pint) with the milk, then put about 2 tablespoons of the mixture aside in a cup for glazing the scones later. Gradually add the egg mixture to the dry ingredients, stirring it in until you have a soft dough. The scone mixture should be on the wet side, sticking to your fingers, as the scones will rise better.
 4. Turn the dough on to a lightly floured surface and flatten it out with your hand or a rolling pin to a thickness of 1-2 cm (1/2-3/4 in). Use a 5cm (2 in) fluted cutter to stamp out the scones by pushing the cutter straight down into the dough (as opposed to twisting it), then lifting it straight out. This will ensure that the scones rise evenly and keep their shape. Gently push the remaining dough together, knead lightly then re-roll and cut more scones.
 5. Arrange the scones on the prepared baking trays and brush the tops with the reserved beaten egg mixture to glaze. Bake in the pre-heated oven for 10-15 minutes, until well risen and golden. Transfer to a wire rack and leave to cool, covered with a clean tea towel to keep them moist. Serve cut in half and spread generously with strawberry jam. Top with a good spoonful of clotted or whipped cream, if you like.

Special Occasion Outfits

  Hello everybody!
This week's blog is a fashion themed post. I went to a lovely Christening today and this event gave me the inspiration for this blog. I realised that there are so many possibilities to bring together beautiful outfits, so I thought I'd do a post dedicated to looks for specials occasions. Organise Your Life

  Hello everybody!
  This week's blog post is something very different to anything I've ever done before so I hope you enjoy it! I'm doing an organisational post! For those of you who are unorganised I feel this may help you. I will be showing you three ways I organise my life!  ▪️ Appointments: Any days I have an appointment at a doctors or dentist I make sure to track!
 ▪️ Tests: Tests are very important to jot down, so you can be well prepared!
 ▪️ Days out: Shopping trips, family events and special occasions must not be double booked!
 ▪️ Sleepovers: These are fun to plan and having on a calendar, diary, or app helps with the details!
